The ingredients needed to make Veggie Bake:
  1. Get 2 zucchini, ends trimmed, halved twice and diced
  2. Take 2 carrots, ends trimmed, halved twice and diced
  3. Prepare 2 yellow squash, ends trimmed, halved twice and diced
  4. Prepare 1 sweet onion, halved and quarted
  5. Get 1/2 cup Italian bread crumbs
  6. Get 4 tbsp Lemon Flavored Olive Oil

Instructions to make Veggie Bake:
  1. Preheat oven to 375°.
  2. Saving the breadcrumbs for last, combine all ingredients in a large bowl. Then add the bread crumbs. (This gets messy). Using your hands, combine all ingredients until completely covered.
  3. Grease a baking dish and add the veggies to the pan. Cook for 45 minutes.
  4. Add a dash of parmesan on top for extra flavor! Enjoy!!
